"Patrick Robertson, the new Chef at Pappas Restaurant, was one of six chefs brought in by the Food Network for the show Restaurant: Impossible. Roberston received the call at 8:30 the night before, so he watched three episodes of the show to become familiar with the format. "When I walked in the door that morning, I expected to get the job," says Roberston. The candidates competed for the job in 15-minute cook-off for host and celebrity chef Robert Irvine. The dish Robertson made with the ingredients provided, was an item on Irvine's menu. The Branzino, a seared white bass with ragu of artichoke, tomato, lemon and mint, will be served at the premiere dinner party. Robertson was not chosen as chef. He was considered too experienced, but he volunteered to help with the relaunch. There were about 15 cooks in the kitchen for the relaunch. Roberston worked the saute and grill stations. "Robert leaned on me heavily," he says. At the end of the night, Irvine suggested that the owners keep Roberston on as a consultant for a few weeks. In time, the chosen chef didn't work out and Robertson was offered the job. Sous chef Matthew Babauta was also one of the cooks from the makeover. "Perceptions have always been that crossing the bridge is too far to go for good food," says Robertson. First subject jazz master Thara Memory at rehearsal for a performance called "Artfully Miles" to kick off the Portland Jazz Festival this year at Dolores Winningstad Theater. Thara wanted to incorporate a spoken word element into the show and I, along with Renee Mitchell, performed poetry in tribute to Thara, Miles Davis and the musical Porgy and Bess. Second subject is Esperanza Spalding, a soon to be jazz great. She returned to Portland at the Gerding Theater to perform in honor of supporting her mentors Thara Memory and jazz pianist Janice Scroggins as well as raise funds for Mr. Memory's American Music Project. When "Es" mentions she started to play bass at 15, I directed attention to when she was 16, fresh into learning the upright bass introducing a group of young teens, Blak Scienz Tribe, on my arts program called "Wone TV". Third community figure is Teressa Raiford, a galvanizing woman who took initiative to run for Portland City Council and would be the first Black woman to sit in the council chambers. I was hired to be her media director and follow her for an upcoming documentary of her (hopefully victorious) run. Next community giant is the "Master Drummer" Ghanaian legend Obo Addy. He asked me to navigate a stage production featuring a narrative showing the African traditions present within the foundation of hip-hop culture.
